Blueberry Corn Breakfast Cake can be a really great and healthy meal to start up your day. You can use it for sugar replacement sucanat or other preferred sweeteners. You can serve with whipped cream.

Blueberry Corn Breakfast Cake

 1 ½ cups Organic fresh or frozen blueberries
 ½ cup Yellow Corn Meal
 ½ cup Fresh Ground Kamut Flour
 ¼ cup Sugar
 1 tsp Baking powder
 ¼ qt Sea salt
 ½ cup Organic buttermilk or kefir
 1 Organic egg
 4 tsp Oil
 1 tsp Vanilla

Put all ingredients together except for blueberries and stir.


Pour into already greased , round cake pan or 9X13 baking dish. Sprinkle with cinnamon and sugar and top with berries.


Heat up the oven to 425 and bake for 25-30 mins. You can serve as a breakfast with whipped cream.
